Covers
Definition: One guest served one meal; used to forecast volume, labor, and inventory.
A cover is a single diner meal occasion in planning parlance, whether dine-in, takeout, or delivery counted as one transaction guest. Operators translate covers into seat turns, kitchen throughput, and purchasing pars.
Miscounting covers—especially blending lunch and dinner or ignoring seasonality—causes chronic over- or under-ordering. POS reports should segment covers by daypart for scheduling.
When underwriting a lease, divide required monthly sales by realistic average check to estimate minimum covers per day. Compare that to observed foot traffic and competitor volumes in the trade area.
