Type I Hood
Definition: Grease-rated exhaust hood with fire suppression for high-grease cooking appliances.
Type I hoods are mandatory over equipment that produces grease-laden vapors. They include baffle filters, ductwork to the roof or wall, and automatic fire suppression systems tied to fuel shutoffs.
Changing from a low-grease to a high-grease menu may require hood upgrades and new suppression design. Inspectors review hood manufacturer specs against equipment lists on health and fire plans.
Never operate grease-producing equipment without approved Type I coverage; violations can halt opening.
